Rustic Potatoes

Dead easy to make, hardly any preparation and absolutely delicious on their own as a side dish or as an accompaniment to anything else.

Ingredients

8 small potatoes with skins on
2 tbsp olive oil
Sea salt
Dried herbs (optional)

Method

  • Simply cut the potatoes in half, put flat side down into a large baking tray, drizzle the oil over the potatoes, then salt, then the herbs (if required)
  • Pop into a preheated oven at 200C 200°C) and roast for 30 mins or until the potatoes are crispy and golden brown.
