Peach and Nutella Surprise

This is definitely one for the adults due to its alcoholic content, this being the surprise! It makes a wonderful dinner party dessert.

The combination of rich hazelnut and warming brandy makes this a popular dessert - quick and easy too!


You must avoid stirring during the sugar and water process as otherwise it will crystallize. You can swirl the pan without any detriment.



2 ripe peaches, halved and de-stoned
2 cup of white sugar
4 tbsp of cold water
4 tbsp of brandy
Small pot of double cream (or crème fraiche)
A little whipped cream for decoration
4 tbsp of Nutella


  • Using a 24cm frypan, add the sugar to the water and cook on a low heat without stirring until the sugar turns to a golden syrup colour. This will take around 6-8 minutes.
  • When you have reached the required colour, carefully spoon the peach halves, skin side up, into the sugar mix and gently cook on a low heat for a further 2 minutes. Turn the peaches and cook for a further 2 minutes.
  • Turn again so that the skin side is up, add the brandy and quickly ignite. When the flame subsides, pour in the cream, swirl the pan carefully and slowly cook on a low heat until the cream starts to bubble.
  • At the last minute, just before you serve, take the pan from the heat, add the Nutella and swirl the pan so that it mixes into the sugar and cream and serve immediately with either whipped double cream, crème fraiche or a scoop of vanilla ice cream, topped with a little drizzle of Nutella.
