Pesto Sauce

Fantastic with a simple pasta dish, this pesto sauce also compliments fish such as salmon and sea bass perfectly.

Transfer to an airtight container (Lock and Lock mini containers are ideal for this use) and place in the fridge until ready to use.



2 handfuls of fresh basil leaves
2 tsbps of pine nuts
2 cloves of crushed garlic
1/2 tsp of Malvern salt
1/2 tsp ground black pepper
4 tsp extra virgin olive oil


Using a pestle and mortar (or a mini liquidiser), crush the garlic with the salt, add the basil and the pine nuts and pound this for 2 or 3 mins.
Slowly add the olive oil, mixing all the time. Season to taste.
