Homemade Mayonnaise

So simple to make and as delicious as shop bought versions - but much cheaper!

Once you have got the hang of making mayonnaise you can add other ingredients such as garlic and herbs and good old Heinz tomato ketchup (to make a seafood sauce).

 

Ingredients

2 free range egg yolks
1 tsp fresh lime juice
1tsp white wine vinegar
1½ tsp Dijon Mustard
Pinch Maldon sea salt
¼ tsp white pepper
150ml extra virgin olive oil
150ml vegetable oil

Method

Simply place the eggs, lime juice, white wine vinegar, mustard, salt and white pepper in food processor and blitz until well blended
Slowly add the 2 oils at a very slow trickle rate through the feeder tube of the food processor until the mayonnaise becomes thick and creamy.

Option:
Omit the white wine vinegar and puree 4 cloves of garlic.
Add finely chopped flat leaf parsley or any other herb that you fancy.
This mayonnaise goes very well with steamed fish, chicken and vegetables.
