Sweet & Sour Sauce

I love making my own sauces and this one is a particular favourite of mine.

I always find that this sauce is delicious with either pork or chicken as it really brings out the flavour of the meat.



4tbs groundnut oil
5 cloves garlic cut into slithers
1 very small red onion finely diced
3cm fresh ginger, peeled and shredded
1 large carrot peeled and shredded
2red chillies, de-seeded and finely diced
ΒΌ tsp dried chili flakes
175 ml water
175ml rice wine vinegar
175 ml Heinz tomato ketchup
2 slices of fresh pineapple, prepared and chopped
6tbs runny honey
1tsp Worcestershire sauce
3tbs cornflour, mixed in a little water


  • Place the groundnut oil into a saucepan and heat up
  • Add the garlic, onion, ginger, carrot, chillies and chili flakes and fry until softened
  • Add the water, rice vinegar, tomato ketchup, pineapple, Worcestershire sauce and the honey, bring to the boil and allow to simmer for 5-7 minutes
  • Add the cornflour paste and continue to simmer, stirring all the time until the sauce thickens. Either remove from the heat until your pork is cooked or pop in a container and keep in the fridge until you are ready to use

You can use tinned pineapple chunks if the fresh variety is not available.
