Pork Stirfry

A quick and easy dish to prepare for any time of year and healthy and nutritious too.

You can substitute in chicken instead of pork if you prefer and if you are a vegetarian, Quorn is a great substitute.

If you have any carrots, peas, cauliflower heads in the fridge, throw them in too for extra texture - anything goes!

Tip:

Marinade the pork overnight for a rich deep flavour.

 

Ingredients

500g fillet lean pork, diced
1 can bamboo shoots
100g fresh spinach, washed and drained
1 large courgette, sliced
3tbsp sesame oil or low fat substitute
2tbsp oyster sauce
1tbs lime juice
½ tsp curry paste
1 tsp sugar
Salt
Freshly ground black pepper

Method

  • Pour the oyster sauce and black pepper into a bowl and add the pork and marinade for at least 2 hours
  • Wash and drain the bamboo shoots
  • Wash and drain the spinach and dry with kitchen paper
  • Once the pork has marinated, heat the sesame oil in a wok and fry the drained pork for 3 minutes tossing frequently add bamboo shoots, courgettes and spinach
  • Add lime juice and sugar and simmer for 2 minutes
  • Season with salt and pepper
