Loin of Pork on a bed of Vegetables

This is a quick and easy supper dish, on the table in half an hour.

Easy, nutritious and colourful, a dish to tempt even the kids! Cook in a large frypan or better still, in a wok.

Tip:

If you fancy an extra texture to this dish, sprinkle over some fresh finely grated parmesan cheese and crushed croutons.

 

Ingredients

4 loins of pork, trimmed and cubed
6 spring onions, sliced at an angle
1 clove of garlic, chopped
2 yellow peppers deseeded and chopped into 1" pieces
12 cherry tomatoes, halved
12 button mushrooms, halved
2 tbsp freshly chopped coriander
1 tbsp freshly chopped thyme
1 red chilli, deseeded and chopped
1 tbsp sweet chilli sauce
1/2 pack of frozen garden peas, cooked and cooled
Juice of one lemon
Salt and Pepper to taste
1 tbsp olive oil

Method

  • Heat up the wok on a medium heat until very hot.
  • Place the oil into a large fry pan or wok and heat up, until hot.
  • Add the pork and sear on all sides for around 4 -5 minutes. Remove from the pan and reserve.
  • Add the spring onions, garlic, chillies and peppers to the pan or wok.
  • Toss into the juices left in the pan and cook for 5 minutes, making sure not to colour the vegetables, just soften them
  • Return the pork to the pan with the vegetables and toss.
  • Add the sweet chilli sauce and cook for a further 2 minutes.
  • Finally add the fresh herbs and the peas, season to taste with salt and pepper and squeeze on the lemon juice
