Cider Sausage Bake

If you want quick and tasty dinner, this is the one for you. All prepared and cooked in one dish, its a favourite all the family will enjoy. Serve with creamy mashed potatoes or Yorkshire puddings with lashings of the sticky sauce ladled over the top - mmmm!

Make the Sauce

Whilst the sausages are cooking, gently heat the marmalade, mustard and cider in a saucepan and cook until the marmalade has melted, stirring all the time.

Turn up the heat and let it boil for 2 minutes until the mixure has reduced by half.

 

Ingredients

750g baby new potatoes, cut into quarters
2 tbsp olive oil
8 good quality sausages
1 medium onion, chopped and sliced
3 tbsp orange marmalade
2 tbsp wholegrain mustard
150ml sweet cider
a few rosemary sprigs

Method

  • Preheat your oven to 200°C.
  • Put the potatoes & onions into a large roasting tin and drizzle with olive oil and roast for 10 minutes.
  • Place the sausages in amongst the potatoes & onions so they are touching the bottom of the tin.
  • Roast for another 15-20 minutes, turning once during cooking, until they are brown all over.
  • Whilst the sausages are cooking, gently heat the marmalade, mustard and cider in a saucepan and cook until the marmalade has melted, stirring all the time.
  • Turn up the heat and let it boil for 2 minutes until the mixure has reduced by half.
  • Remove the sausages from the oven, then pour over the sauce and toss gently together.
  • Scatter the rosemary sprigs on top and return to the over for a further 10 minutes until golden brown and the whole thing is sticky with the glaze of the marmalade.
  • Grind some fresh sea salt and black pepper over the top then serve
