Scrambled Eggs

This is such a simple dish but so many of the people that I meet whilst I am out and about tell me theirs are always rubbery or tasteless.

Follow this simple recipe and you will have perfect results every time. Great for any time of day.

Tip:

Try adding finely sliced smoked salmon to the eggs when plating up - a fabulous breakfast/brunch idea.

 

Ingredients

A knob of butter
4 Organic eggs
35ml milk or cream
Salt and pepper to taste

Method

  • Place a knob of butter in a microwaveable jug and cook on the highest setting for 20 secs
  • Crack in 4 organic eggs (superb flavour!) with 35ml of milk (or cream if you aren't watching your waistline!). Beat together thoroughly.
  • Microwave on the highest setting for 90 secs then remove from microwave, give it all another little whisk and cook for a further 90 secs
  • Leave to stand for 2 mins as the eggs will continue to cook
  • Serve on lightly toasted and buttered crusty bread with a fresh herb garnish.
