Pancakes with Nutella, fruit and yoghurt

A twist on the traditional lemon and sugar pancake but don't confine it just to Pancake Day - this is makes a delicious breakfast or dessert for both adults and kids.

Tip:

Use the fruit of your choice, whatever you fancy and substitute the yoghurt for Crème Fraiche is you prefer.

 

Ingredients

2 hot pancakes
1 tsp of icing sugar
12 raspberries
Juice of 1 lemon
One pot of natural yoghurt
3 tbsp of Nutella

Method

  • Make your pancakes using the Pancake Batter Mix.
  • Whilst they are cooking away, using a small bowl, fold the raspberries into the yoghurt
  • Now place the just cooked pancake onto a warm plate and spread the Nutella over the whole of the pancake
  • Spoon the yoghurt mix onto half of the pancake, then fold the pancake over in half, then in half again to make a triangular shape.
  • Squeeze the lemon juice over the top and then dust with the icing sugar, then drizzle a little more Nutella over the top.
