Chicken with Chorizo and Peppers

This is dead easy to make, looks good on the plate and is absolutely delicious. Your partner will be impressed!

Add a little more chilli if you like your food a bit hotter!



2tbsp olive oil
8 chicken thighs with the skin attached
1 round of chorizo sausage, skinned and chopped into 16 even slices
2 white onions, peeled and quartered
4 cloves garlic, crushed
1/2 red pepper, yellow and orange peppers
1 red chilli chopped
2 sweet potatoes, peeled and roughly sliced
1tsp dried mixed herbs
1tbsp sweet chilli sauce
Salt and black crushed peppercorns to taste
1tbsp fresh basil or flat leaf parsley


  • Preheat the oven to 190°C
  • Heat up a large fry pan, then add the oil and heat up until hot.
  • Add the chicken thighs, skin side down and on a medium heat, sear the chicken until the skin is golden brown.
  • Turn the chicken over, add the chorizo by placing between the chicken pieces and continue to cook for 2 minutes.
  • Add the onions, garlic and the peppers, sweet potatoes, chilli and tuck in between the chicken and chorizo and continue to cook for 4 minutes
  • Add the mixed herbs, sweet chilli sauce salt and pepper and cook for 2 minutes.
  • Place the pan into the preheated oven and continue to cook for 12-15 minutes or until the chicken is cooked through.
  • Serve with boiled rice and serve with a sprig of basil or parsley.
