Chicken and Chorizo Casserole

A deliciously rich casserole with a hint of spiciness from the chorizo - the perfect dinner or supper dish all year round.

Tip:

So you can take it to the table straight from the oven, before placing in the oven, spoon it all into an ovenproof dish with lid and when cooked, sprinkle with the parmesan and take it straight to the table.

 

Ingredients

2 tbsp plain flour
Good pinch sea salt and freshly ground black pepper
2 tsp sweet paprika
1 carrot, peeled and diced
1 stick celery, chopped
2 tbsp olive oil
400g chicken breast meat, cut into bite sized pieces
200g chorizo, skinned and cut into bite sized pieces
2 large Maris Piper potatoes, peeled and cut into bite sized pieces
1 large onion, peeled and diced
2 cloves garlic, crushed
1 Knorr chicken stockpot
1 glass of dry white wine
1 x 400g can of Italian tomatoes
1 tbsp tomato purée
75g Parmesan cheese

Method

  • Preheat the oven to 190°C.
  • Place the flour, salt, pepper and the sweet paprika into a large plastic bag then add the chicken and shake until it is evenly coated with the flour mixture.
  • Using a medium sized oven proof casserole, add the olive oil and heat up till hot on the hob top.
  • Add the onion, carrot, celery, garlic and the potato and gently fry for 5 minutes on a medium heat, until soft and just taking on a colour.
  • Using tongs, remove the chicken pieces from the bag and shake off the excess flour, then dispose of the bag and contents.
  • Place the chicken into the casserole and cook on a medium heat for 5 minutes, then add the chorizo and cook for a further 5 minutes, stirring occasionally.
  • Add the glass of wine and cook on a medium heat for 3 minutes.
  • Add the rest of the ingredients except the parmesan and bring to the boil.
  • Remove from the heat.
  • Put the lid on the casserole, place in the oven and cook for 20 minutes.
  • Spoon the casserole into a serving dish and sprinkle over some freshly grated Parmesan cheese and serve with crusty bread.
