Date and Walnut Cake

One of my all-time favourite cakes as it is so moist and rich in flavour.

Mel (a Yorkshire lass) loves hers with a bit of butter on a slice but being a southerner, I just like it on its own or with a bit of custard.

1tbsp margarine
175g caster sugar
100g stoned dates, chopped
75g walnuts, chopped
1tsp bicarbonate of soda
200ml of boiling water
1 egg, beaten
300g self raising flour, sifted


  • Preheat the oven to 150°C
  • Put the margarine, sugar, chopped dates and walnuts and bicarb in a mixing bowl.
  • Add the boiling water and allow the margarine to melt.
  • Add the beaten egg and the sifted flour and mix well.
  • Spoon into a a lined 2lb tin and cook for 1.5 hours.
  • Check to make sure the cake is cooked using a skewer - if the skewer comes out clean, the cake is cooked inside.
  • Serve with a little butter spread on each slice or just as it comes!


Bake in a silicone loaf mould (2lb) if you have one, as this will save you having to line a tin with greaseproof paper
