Posh Full English Breakfast

A classic that I have adapted over the years. Perfect for that special occasion breakfast and for all those Mums out there!

Serve as a breakfast/brunch dish with a few baked beans or tinned tomatoes, or for lunch or supper with a lovely fresh green side salad

 

Ingredients

1tbsp olive oil
2 rashers smoked bacon sliced thinly
2tsp Worcestershire sauce
3 spring onions, sliced at an angle
¼ of red pepper, thinly sliced
¼ of yellow pepper, thinly sliced
4 cherry tomatoes, sliced
6 basil leaves, roughly torn
½ tsp dried mixed herbs
30g butter
4 rounds of sliced bread
3 eggs,
¼ cup milk
Sea salt and freshly milled black pepper
30g mature cheddar cheese

Method

  • In a large non-stick fry pan, heat up the oil until hot.
  • Add the bacon and fry until crispy, then add the Worcestershire sauce and cook for a further 1 minute.
  • Take out the bacon and reserve
  • In the same pan add the spring onions, red and yellow pepper and cook until softened.
  • Add the tomatoes, basil, herbs and cook through.
  • Return the bacon to the fry pan and combine all the ingredients.
  • Place in a heatproof bowl and keep warm
  • Clean the fry pan and place back onto a low heat.
  • Add the butter andon a low to medium heat bring the butter to foaming stage.
  • Using a small pastry cutter cut 4 rounds from each slice of bread to make a total of 16 rounds.
  • Put the eggs and the milk in a mixing bowl and lightly beat together using a hand whisk.
  • In batches add the bread rounds into the egg wash and allow soaking in the egg wash
  • Place the rounds of bread into the hot butter and gently fry until golden brown.
  • Turn over and gently fry the other side, then drain on kitchen paper.
  • On two plates, place 4 rounds of French toast and top with the bacon mixture.
  • Season to taste with the salt and the pepper and place a little grated cheese.
  • Now place the remaining rounds of French toast on top and serve.
