Mel and Mal's Summer Fruit Couli

Ingredients
  • 1/3 of a bag of frozen Summer Fruits (from any supermarket)
  • 50g caster sugar
  • Juice of 1 lemon

A delicious accompaniment to many desserts and pancakes but particularly nice over raspberry ripple icecream. Lovely!

You can keep this in the fridge in an airtight container for up to a week so you have it on tap when you need it

Tip : The best way of pureeing fruit is to invest in a conical fine mesh stainless steel sieve - it makes the job so much easier and less messy

Instructions

Cook the Fruit

Place all the ingredients into a small saucepan and keeping the heat low, cook the fruit and sugar together, until the sugar has dissolved

Increase the heat and add the lemon juice and reduce the liquid by a quarter

Add Sweetness

Taste for required sweetness and allow to cool, then pour the mixture into a conical sieve, pressing through with a spoon into a clean bowl and then discard all the remainder that will be inside the sieve

Allow to cool and then pour over the dessert of your choice
