Follow this simple recipe and you will have perfect results every time. Great for any time of day.
Serves : 2 Prep/Cooking Time : 7mins
Tip : Try adding finely sliced smoked salmon to the eggs when plating up - a fabulous breakfast/brunch idea
Place a knob of butter in a microwaveable jug and cook on the highest setting for 20 secs
Crack in 4 organic eggs (superb flavour!) with 35ml of milk (or cream if you aren't watching your waistline!). Beat together thoroughly.
Microwave on the highest setting for 90 secs then remove from microwave, give it all another little whisk and cook for a further 90 secs
Leave to stand for 2 mins as the eggs will continue to cook
Serve on lightly toasted and buttered crusty bread with a fresh herb garnish
